Rise and shine, beautiful! Morning times call for some delicious omelettes! Not to mention my favorite kind of breakfast because who doesn’t love eggs?

Ingredients List:
2 Eggs
1/2 Box of Button Mushrooms, sliced
Diced Onions
Diced Bell Peppers
1/2 Diced Beef Sausage

After everything is diced toss them over the skillet on medium heat until golden brown and place them in a bowl. Crack your eggs into a bowl and scramble it, you can also opt for egg whites too by taking out the yolk. Once scrambled, toss in some salt and pepper and gently pour it into the skillet into a thin layer, almost like a crepe. Keep watch until the egg is cooked, the top layer will still remain a little uncooked and gooey. Then proceed to take the bowl of vegetables and sausage and place them over the egg. Spread them out about 3/4 from the edge and gently using a spatula flip the egg over and let it cook a little bit longer, depending on how you like your egg you can let it cook all the way or have it a little runny.

Add a side of fruits or potatoes and voila! Delicious, delicious breakfast! Hope you enjoy and have a great weekend! 🙂
