My second attempt in the kitchen my first week! This one was less of a hassle because it was something both he and I could eat without me having to make two separate dinners due to my diet choices. Although much more time consuming due to baking time. Still, I was so excited to try this recipe and was thrilled that it turned out better than I expected! đŸ™‚
Please note this makes about 4-6 servings.
Ingredients Needed:
3 Sweet Potatoes, diced and soaked for 5 minutes
2 Yellow Squashes, diced
2 Zucchinis, diced
1 Tomato, diced
5 Cloves of Garlic, minced
2 Links of Sausage, sliced
Salt & Pepper
Olive Oil
I’m not well versed in vegetable varieties, but from this recipe I learned that there were a huge selection of different squashes depending on season. They’re separated to winter and summer squashes and they generally can’t be substituted for one or the other since winter squashes have much thicker and harder skin than summer squashes. So for recipes that use summer squashes it’s because they’re malleable and easy to cook. Double check your market place and recipes before deciding on which one to use if you want to swap out ingredients. đŸ™‚ Here’s a list of other summer squash alternatives.
Preheat oven to 400 degrees. Layer your pan with foil if you want to, but not mandatory. I drizzled a layer of olive oil on the bottom then used a basting brush to evenly spread over the pan. I tossed in all the sweet potatoes, yellow squash, zucchini, tomato, sausages, and garlic then drizzled another layer of olive oil. Salt and pepper lightly then use your hands and mix it together. Bake for about 40-45 minutes until the vegetables are sizzling and sausage has that nice crisp edge.
I couldn’t be happier with the results! David was inexplicably impressed as well as myself. The vegetables came out perfect and the sausages had that nice crisp but tender center and the minced garlic just gave it that perfect additional sweetness. I didn’t even know I had it in me to not serve burnt food! LOL. It’s quite encouraging and pretty excited to look for new things to try next week. I’ll keep you guys updated! Happy eating! đŸ˜€
