Happy Valentine’s Day, everyone!

Whether you’re spending the day solo, with a significant other, or just not celebrating it at all, here’s a delicious paleo-friendly and dairy-free pancake recipe for everyone to enjoy! Why? Because they’re my favorite pancakes (and I hate pancakes) and I wanted to share the joy and my love for this delicious dish. Not mention the strawberries cut into heart shapes is a cute reminder that today is a celebration of Saint Valentine.

As legend goes, Valentine had died for love. He was arrested and imprisoned upon being caught marrying Christian couples and otherwise aiding Christians who were being persecuted by Emperor Claudius (he was sickly, ill-mannered, and a recluse) in Rome. Valentine was later beheaded outside the Flaminian Gate. #TheMoreYourKnow. Died a martyr with a day dedicated to him.

Anyways, I digress. There’s only two main ingredients you’ll be needing:
2 Eggs
1 Banana
1 Tablespoon of Agave or Honey*
2-3 Sliced Strawberries*

Last two ingredients are optional, but I like to add to give it a little sweet and tartness. This recipe makes about 2 big pancakes or 3-4 small pancakes if you use it sparingly.

Pancake Steps:
1. Peel and smash the bananas with a fork in a bowl
2. Crack the two eggs into the same bowl
3. Stir/whip until almost batter-like consistency
4. Pour into pan; Cook until golden then flip
5. Both sides should be a fine gold color before plating
6. Drizzle of your tablespoon honey/agave
7. Toss on your sliced strawberries

Voilá, easy as pie (not really, pie actually takes a while to make). Hopefully this will give you something to look forward to this Valentine’s day. 🙂 Happy eating and have a wonderful holiday!
